Taco Soup
Ingredients
1 pound Mathews Pasture Raised ground beef
1 package taco seasoning (use your favorite!)
1 can whole kernel corn (or 1 cup Mathews Super Sweet Corn
2 cans diced tomatoes with green chiles (I use Rotel)
2 cans pinto beans
1 cup water
pickled jalapeno slices, optional
Directions
In a skillet, brown ground beef and mix in taco seasoning according to package.
In a large pot, add cooked, seasoned ground beef and all other ingredients (do NOT drain any of the cans!). Mix together.
Bring soup to a boil, stir well. Reduce heat and let simmer.
Simmer soup for 20-25 minutes, or until beans are tender.
Serve over Fritos and top with cheese and any of your favorite taco toppings!
NOTE: For an even EASIER version, brown ground beef and season with taco seasoning packet according to directions. Add beef and all other ingredients to your crockpot - cook on low for 6-8 hours.
