Taco Soup

Ingredients

  • 1 pound Mathews Pasture Raised ground beef

  • 1 package taco seasoning (use your favorite!)

  • 1 can whole kernel corn (or 1 cup Mathews Super Sweet Corn

  • 2 cans diced tomatoes with green chiles (I use Rotel)

  • 2 cans pinto beans

  • 1 cup water

  • pickled jalapeno slices, optional

Directions

  1. In a skillet, brown ground beef and mix in taco seasoning according to package.

  2. In a large pot, add cooked, seasoned ground beef and all other ingredients (do NOT drain any of the cans!). Mix together.

  3. Bring soup to a boil, stir well. Reduce heat and let simmer.

  4. Simmer soup for 20-25 minutes, or until beans are tender.

  5. Serve over Fritos and top with cheese and any of your favorite taco toppings!

NOTE: For an even EASIER version, brown ground beef and season with taco seasoning packet according to directions. Add beef and all other ingredients to your crockpot - cook on low for 6-8 hours.
